For bittersweet chocolate day, I chose a favorite cookie of my son, Camdyn: White Chip Chocolate Cookies. Technically, these really don't have bittersweet chocolate in them, but they do have unsweetened cocoa powder which is close enough. I had these already made up in the freezer so I set out a few to thaw, baked and enjoyed one. I found this recipe on www.allrecipes.com, after my sister brought some down over Thanksgiving. Very chocolatey and chewy!!
