Day 22: National Blond Brownie Day
Happy Blond Brownie Day to you! Blond brownies, also known as blondies, are a brown sugar based dessert bar resembling the traditional chocolate brownie. They may contain chocolate or white chips, and may seem to have a butterscotch taste.
The Neiman Marcus Brownies that I made today actually don't have brown sugar in them, but they are light in color with a cheesecake like topping. I have had this recipe in my collection for probably 10 years, but haven't made them in a long time. These are really sweet, so a little bite goes a long way.
Neiman Marcus Brownies
Yield: 32 squares (184 calories each)
Ingredients:
1 box butter pecan cake mix
2 sticks butter, softened (divided)
3 eggs (divided)
4 cups powdered sugar
1 (8 oz.) package cream cheese, softened (I used light)
Directions:
1. Preheat oven to 300 deg. F. Spray 9 x 13 inch pan with cooking spray.
2. In a bowl, combine cake mix, 1 stick of melted butter, and 1 egg. Press into bottom of prepared pan.
3. In another bowl, mix cream cheese, 1 stick of butter and 2 eggs until smooth. Add powdered sugar and mix until fully incorporated and smooth.
4. Pour over cake mixture. Bake for 1 hour. Cool completely before cutting.
