Traditionally, Peach Melba is a mix of peaches and raspberries in a sauce, topped over vanilla ice cream. I found a recipe for Peach Melba Cupcakes that is similar, but uses angel food cake in place of the ice cream. I just used a box angel food cake mix and baked it in large cupcake liners. I heated raspberry jam and drizzled over the cake, then topped it with whipped cream and peaches. It was a sweet and tangy flavor, very enjoyable, and only 155 calories.
